ANZAC Day at Westbourne Lane: Five Years On

As ANZAC Day approaches, we find ourselves reflecting on the early days of Westbourne Lane — and how this special day has been woven into the heart of our journey.

Five years ago, this photo was taken in the little laneway where it all began — one of our very first Westbourne Lane pickups. We were just starting out, working from home kitchens, experimenting with meal delivery ideas, and connecting with our community one homemade dish at a time.

That year, to honour the spirit of ANZAC Day, we designed a hand-drawn flyer — the cover art was a heartfelt sketch by one of our children of a fallen soldier. We printed them at home, folded them one by one, and paired them with freshly baked ANZAC biscuits that we gave away as part of our very first ANZAC Day Bake-at-Home kits.

It was about more than biscuits — it was about bringing people together, remembering, and sharing food made with love. We’re still doing that today, just on a slightly larger scale.

And while so much has changed, one thing hasn’t: our ANZAC biscuit recipe. It’s the same one we used in that first batch, and it’s still the one we bake at home for our family every April. We’re sharing it again below, in case you want to make a little Westbourne Lane memory in your own kitchen this year.

Our All-Time Favourite ANZAC Biscuit Recipe

There’s nothing quite like a home-made ANZAC biscuit — golden, gently chewy, and filled with the comforting flavours of oats, coconut and golden syrup. This recipe has been passed around countless kitchens and we think it’s one of the best.

Ingredients:

  • 125 grams (4 oz) butter, chopped
  • 2 tablespoons golden syrup
  • 1/2 teaspoon bicarbonate of soda (baking soda)
  • 2 tablespoons hot water
  • 1 cup rolled oats
  • 1 cup plain (all-purpose) flour
  • ½ teaspoon salt
  • 1 cup firmly packed brown sugar
  • 3/4 cup desiccated coconut

Method:

  1. Preheat oven to 180°C. Grease two large oven trays and line with baking paper.

  2. Place all dry ingredients into a large mixing bowl.

  3. Melt the golden syrup and butter together in a saucepan over low heat, stirring. (Or microwave together for 30–40 seconds — but be careful, it’ll be hot!)

  4. Stir bicarbonate of soda into the butter mixture.

  5. Add the butter mixture and 2 tablespoons of hot water to the dry ingredients. Mix well.

  6. Roll into golf ball-sized portions and place 5cm apart on trays.

  7. Bake for 15 minutes for a chewy biscuit, or up to 18 minutes for extra crunch.

  8. Cool biscuits on trays.

Tips:

  • Best eaten just cool enough to bite into!
  • Store in an airtight container for up to a week.
  • Reuse your containers — it’s what we do!
