The Pie Story: From Merivale Kitchens to Westbourne Lane

Some dishes stay with you.
Not because they’re complicated — but because they’re right.

For me, pies and sausage rolls have always been one of those things.

Where It All Started – Merivale Kitchens

Years ago, while cooking at Merivale, I entered an internal company-wide chef competition. Every chef across the group was invited to submit a dish for consideration on the menu.

I entered a pie and sausage roll.

Not reinvented. Not overworked. Just done properly — good meat, honest seasoning, proper pastry, and the kind of flavour you remember.

They won.
And they were put on the menu.

Years later, those pies and sausage rolls are still being served at all Merivale venues, pubs and events — which tells you everything you need to know. When something works, it doesn’t need changing.

Old Mates, Same Obsession

Fast forward a few years, and a conversation with Colin Fassnidge brought it all full circle.

Colin and I go way back — old chef mates from back in the day, forged in busy kitchens where flavour mattered more than fuss. Like most good food ideas, the conversation was simple:

“We should do something together.”

No long pitch. No brand strategy meeting.
Just two chefs talking about food — and naturally, the conversation landed on pies.

The Pie Collab

Pies are democratic food. Everyone has an opinion, and everyone remembers the good ones.

The idea wasn’t to make them fancy — it was to make them proper.
The kind of pies you’d happily eat standing at the bench, straight from the oven, with pastry flakes everywhere.

That’s how the Westbourne Lane pies came about:

  • Slow-cooked fillings

  • Rich, savoury gravies

  • Proper shortcrust and puff pastry

  • No shortcuts

  • No filler

The same thinking that won that Merivale chef award — just done again, carefully, and with experience behind it.
