With a career spanning 30 years, Gavin Carfax-Foster is the owner and operator of a ready made food/sauces and meals company Westbourne Lane (since 2022) where he makes gourmet products for retail, food service, wholesale, contract manufacturing, and a delivery service direct to customers.
He has developed a premium range of sauces for a seafood brand for retail including the concept design, development, photoshoots and manufacturing.
He has worked as Culinary Director/ Group Manager for Dedes Waterfront Group (6 years) overlooking multiple venues including fine dining, large scale casual dining, wedding and event spaces, an Asian diner, a pizza & pasta restaurant, a Sushi and Fish and Chips takeaway, designed commercial kitchens, a bakery project, and several other concepts.
Gavin is an acclaimed multi award winning chef, having worked in several three hatted Sydney restaurants including est. (Merivale owned) where he was the right hand man to Executive Chef Peter Doyle for five years.
